Marshmallow fondant

My kids have been intrigued by this new show on TLC called "Cake Boss." I decided that I wanted to try and make a cake using fondant like they do in the show. So, I scoured the internet for a good recipe. Most of them said that the recipe made great fondant, but didn't taste very good. I happened to stumble across a recipe for fondant using marshmallows. How could you go wrong with marshmallows? So, we tried it. Here is the recipe:

1 16 oz. package of mini marshmallows

2 T. water

1 1/2 lbs. powdered sugar

Place whole package of marshmallows and water into a microwave safe bowl. Microwave on high for 20 seconds. Take out and stir. Microwave for another 20 seconds. Take out and stir. Repeat process until marshmallow cream is smooth. Meanwhile, thoroughly grease your countertop with vegetable shortening. Spread about 3/4 lb powdered sugar onto greased surface. Grease your hands. Pour marshmallow cream onto sugared surface and pour 3/4 more lb of powdered sugar over the top. Knead cream until fondant is firm and smooth, fully mixing in most of the sugar. Refrigerate overnight in greased plastic wrap. When ready to use, microwave for 10 seconds or until it feels soft enough to roll out. Again cover surface with powdered sugar and roll out to desired thickness. Decorate your cake! (The key to getting it to stick to your cake is to frost your cake with regular frosting and then place fondant over the top.) We had so much fun making little cakes (the girls each did their own). *if you want to color your fondant, add food coloring before pouring marshmallow out onto powdered sugar surface.
It's really messy but fun!
The finished product...imagine the possibilities!

Okay, here's week 3 of our vacation... I'm struggling with being off vacation. The kids are extra cranky and whiney. For the last 3 weeks, they have had so many activities to keep them busy every single day. Now that we're home, I'm hearing a lot more "Mom, I'm bored." I lost it today...my sanity that is. Four of the five were whining at me at the same time. A mom can only take so much. I had to put myself in time out. Does school start soon?

We're home!

Hi everyone! After 20 days, we are finally back in Springfield! We had such a great time in Utah and then in Seaside, Oregon for our family reunion. I must admit though, it is so great to be home! My lawn is too long, my garden is overgrown and I've got piles of bills and mail to catch up on but I don't care! We're home! I posted our first week of activities in the scrapbook pages below. Click on them to see what we did!

Posting from Utah

Hey everyone...I thought I'd write a quick post to let you know that we are having so much fun in Utah. (Though we are missing daddy very much! 10 days is a long time to be away!) We have had some neat experiences. We went through the Oquirrh Mountain Temple Open house. We went to the Hogle Zoo and of course, to the famous Dairy Keen (Home of the Train) in Heber City (where my parents live). I also got to take the girls to a small town presentation of the "Sound Of Music" in Midway. It was an outdoor theatre set in the very green mountains. All around the theatre are Swiss-looking buildings (it's a resort) and right next to where we sat, there were goats. It really felt like we were in Austria. (The setting for the "Sound of Music") There is so much to do in Utah! We are leaving for Oregon on Sunday after church and meeting up with Casey (hurray!) on Monday in Portland. From there, we are driving to Seaside for a week long family reunion!! I'll post later with pictures!
